After a year of pandemic, lockdowns and fear, I decided it’s time to bring more fun back into my life. We’re still in a netherland of uncertainty, and things have changed, but there are many small things I can do to feel happy.
This vegan carrot cake makes me feel happy! I used a recipe from The Happy Herbivore and made some modifications. I didn’t have pastry flour, so I used whole grain spelt flour instead. I cut the sugar in half, because that seemed like a lot of sugar. You could also substitue another sweetener or even date puree. The batter seemed too thick, so I added a little oat milk. You could also add raisins and/or chopped walnuts. I baked it in an 8″ x 8″ pan instead of cupcake liners, which requires more baking time — 45 minutes for me, but your time may vary. It’s good, and not too sweet. I highly recommend it for a treat that’s relatively healthy.
I’m taking a Zoom class at Cal Lutheran that’s fun. It’s a six-week journey through the music of the Beach Boys taught by Cary Ginell. It’s like time travelling back to the 1960s and early 1970s, and it brings back happy memories. The Cal Lutheran Fifty and Better program offers great online classes, and you might want to join their mailing list to find out about upcoming offerings.
The California native Island Alum plants in my backyard are blooming, and that’s fun to see. Their delicate, lacy flowers remind me of a magical fairy woodland. They’re growing amongst yellow native columbines, which are also starting to bloom.
Arne & Carlos are always fun. They produce interesting and informative videos about knitting, life in Norway, their dogs, cooking, and anything else that comes to them off the top of their heads. They’re very entertaining and charming, and I’ve learned so much about Norway from them. Even though I’ve never met them in person, they feel like some of my best friends. Dinner with my friend Toby was fun! We went to Am Noodle, the new Thai restaurant on the East side of Ventura. I had their Pad Thai with vegetables and no egg. So good, and it’s lovely to be able to eat out again with ease. It was great to spend time with Toby, too, and catch up on everything that’s been happening.
I’ve started to wear mismatched socks, which I think is fun! Some people notice, and others don’t. Or maybe they just don’t want to say anything. These are Hotsox. They offer hundreds of different fun styles to choose from.
